Yield: 6 lava cakes
Preparation time: 15 minutes
Bake time: 10-13 minutes
Ingredients:
4 oz. Baker's Semi-Sweet Chocolate
2 1/2 cup butter
3 1 cup icing sugar
4 2 whole eggs
5 2 egg yolks
6 6 Tbsp. flour
Topping of choice
Directions: Heat oven to 425°F.
Butter 4 (3/4-cup) custard cups or ramekins. Place on baking sheet.
Microwave chocolate and butter in a large microwaveable bowl on high for 1 min. or until butter is melted.
Stir with a whisk until chocolate is completely melted. Add 1 cup of powdered sugar; mix well.
Mix in whole eggs and egg yolks.
Stir in flour.
Pour into custard cups.
Bake for 10 to 13 minutes, or until the sides are firm but the centres are still soft.
Let stand 1 min. Carefully run small knife around edges of cakes to loosen.
Invert cakes onto dessert plates. While holding the, with a tea towel as ramekins will still be warm.
Remove cups.
Top with topping of choice. Serve warm*
*if keeping till the next day warm up in the microwave before eating to recreate molten centre
